When you’re looking for a dessert that will really wow your crowd, you’ve gotta bake a pie. Sure, cake is great (like really great, don’t get us wrong), but there’s something about a pie (and fruit pies in particular) that conveys an extra level of tender loving care. Is it the homemade pie crust? The only-in-season-for-a-short-while fruit fillings? The way they're as good cold as they are piping hot, served with homemade ice cream or whipped cream? We’re not sure, but what we do know is we’ve got some of the best recipes here, whether you’re a master baker or just dipping your toes in. Looking for a spring or summer dessert? Pies are some of the best options for showing off the bounty of summer fruit. We’ve got all the most excellent options here, like bourbon peach pie, fresh blueberry pie, strawberry rhubarb pie, and blackberry pie. One of the best parts about these pies? You can usually use slightly underripe fruit for them. The process of baking will help break the tough fruit down, and you won’t even notice they weren’t ripe to begin with in the end product. 🙌

When the weather starts to get colder come fall and winter, we’re looking for heartier, comforting options (sort of like chicken pot pie or shepherd’s pie, but for dessert). As the berry supply dwindles, it would be easy to ditch fruit in lieu of other classic options (looking at you pumpkin and pecan), but we implore you to keep giving fruit a chance. Apple pie is the classic option (we’ve got an OG version plus crumble and caramel versions here), but don’t forget about cranberries too. Combine the two, like in our apple cranberry pie, or turn them on their own into a hot pink stunner of a cranberry pie. Desperately craving a cherry or strawberry pie in winter (for Valentine’s Day maybe?). Use frozen fruit! Simply defrost the fruit, and drain it of any excess liquid, then follow the recipes as is.

Lemon Icebox Pie

Our version of lemon icebox pie (itself a riff of Key lime pie) calls for an extra-buttery graham cracker crust that’s first partially baked before the filling is poured in. Why bake the crust? We’ve found that pre-baking the crust gives the pie a jumpstart on caramelization—and caramelization is a good, tasty thing. Once cooled and the filling added, a second bake helps stabilize the filling, along with ensuring the yolks are fully cooked.

Key Lime Pie

Key limes are smaller, more aromatic, and more floral than regular limes. They're also slightly yellow in color and smaller than the limes we usually cook with. It is tedious to squeeze juice out of the little fruits, but trust us, it's worth it. If all you can find is bottled though, that'll do too, just up the amount of regular lime zest to 3 tbsp.
