Chef Manouschka Guerrier has made meals for some of Hollywood’s most famous stars. She’s cooked for the Kardashians, Selena Gomez, and the queen herself: Ariana Grande. Guerrier stopped by the Delish Test Kitchen to show us how to make Grande’s favorite dish.

Chicken scarpariello is typically made with braised chicken thighs and sausage and is swimming in a spicy, pickled pepper-packed sauce (try saying that five times fast.) It’s a classic Italian American dish that you can find at red sauce joints all over the country, including the ultra-exclusive Rao’s in New York City.

And it’s the very first dish that Guerrier ever made for the Grande family. The chef previously starred in the Food Network series Private Chefs of Beverly Hills. Grande’s mother, Joan, was a fan of the show and invited Guerrier to recreate the family’s favorite dish.

Guerrier’s version, however, adapts to Grande’s plant-based diet. That’s right—this recipe is completely vegan. She uses a plant-based chicken substitute, but you can also omit it in favor of hearty oyster mushrooms and artichokes. The vegan sausage, however, is nonnegotiable.

The Grande family loved Guerrier's vegan chicken scarpariello so much that Ariana soon extended an invite for her to join her 18th birthday party. She ended up becoming the Grandes' official private chef and cooking plenty of flavorful vegan meals for the tight-knit and loving family.
