We can't get enough of burrata at the moment, a mozzarella ball stuffed with cream, what's not to love? This recipe serves them with juicy, charred grapes and proves this fruit isn't just for the fruit bowl. The grapes are tossed in herbs and balsamic and barbecued until sticky making a glaze that knocks through the sweetness and pairs perfectly with the creamy burrata. Served with hunks of bread, it makes an easy appetiser or a perfect addition to your charcuterie board.

Ingredients

  • 250 g

    grapes 

  • 2 Tbsp.

    olive oil 

  • 2 Tbsp.

    balsamic vinegar 

  • 5 g

    flat leaf parsley 

  • 1/4 tsp.

    smoked paprika 

  • 1/2 tsp.

    chilli flakes  

  • 2 tsp.

    sugar 

  • 1/2 tsp.

    salt 

  • 150 g

    burrata 

Directions

    1. Step 1In a bowl, add the grapes, olive oil, balsamic vinegar, flat leaf parsley, smoked paprika, dried chilli, sugar and salt. Stir until the grapes are coated, then thread onto skewers. 
    2. Step 2Place a large frying pan over a medium/high heat and add the grape skewers along with the sauce. Cook for 3 minutes a side or until starting to blacken. If cooking on a BBQ they will only need around one minute a side. Serve alongside the burrata with toasted bread and enjoy!
