
You can't beat halloumi fries, with their molten, salty centre and crispy crust, they could be considered the ultimate starter. This recipes sits these golden fingers over a burnt, red pepper sauce that works perfectly against the creamy halloumi.
The great thing about this recipe is the fact you HAVE to burn it, so you could say it's the perfect recipe for the cook that's just starting out. By burning the skin of the pepper, the flesh gets ultra juicy and drinks up all those charred flavours, giving the sauce a yummy, smokey undertone. The sauce is also delicious to toss through spaghetti or even stir through hummus.

Ingredients
For the burnt red pepper sauce
- 4
garlic cloves
- 4 1/2 Tbsp.
olive oil
- 2
red peppers
- 1 tsp.
salt
- 1/2 tsp.
black pepper
- 10 g
flat leaf parsley
For the halloumi fries
- 1
block of halloumi, cut into thick like sticks
- 80 g
golden bread crumbs
- 1/4 tsp.
salt
- 1/4 tsp.
smoked paprika
- 60 g
plain flour
- 1
egg, beaten
- 300 ml
vegetable oil, for frying
Directions
- Step 1To make the red pepper sauce, preheat the grill to its highest temperature and line a baking tray with foil.
- Step 2Add the garlic to a small sheet of foil and drizzle with half a tablespoon of oil. Wrap tightly and add to the baking tray along with the red peppers. Cook under the grill for 30 minutes, turning every 10 minutes or until the peppers are starting to burn and blacken on all sides. Unlike most recipes, we are looking to burn the peppers, so need to worry! Make sure to open windows as this is a smokey job!
- Step 3Place the peppers and garlic into a bowl and cover with cling film for 10-15 minutes or until cool enough to touch. (Leaving them to sweat also helps the skin to peel off easily!)
- Step 4Remove the stalks, centres and skin of the peppers along with the skin of the garlic and place into a food processor.
- Step 5Next, add the oil, salt, pepper, oil and parsley. Blitz for a few seconds or until the red peppers are roughly chopped. Set aside until ready to serve.
- Step 6To make the halloumi fries, mix together the breadcrumbs, salt and smoked paprika. Add the flour and eggs to two separate bowls.
- Step 7Coat each halloumi stick in flour then eggs then breadcrumbs and place onto a plate ready for frying.
- Step 8Add the oil to a frying pan and set over a medium heat. Heat until a piece of bread goes brown, approx. 30 seconds.
- Step 9Shallow fry the sticks for 2-3 minutes aside or until golden brown then drain on kitchen paper.
- Step 10When you're ready to serve, spread the pepper sauce over a plate and serve the halloumi over the top. Enjoy!
