
Bunny Chow is a South African street food consisting of a fragrant curry of some sort, ladled inside a hollowed out loaf of bread, with the inside bread reserved for dipping!
For our bunny chow we've gone with a simple chicken and potato curry, and the result is oh-so-delicious.

Ingredients
- 1
onion, finely diced
2-3 curry leaves
- 2 tsp.
garlic paste
- 2 tsp.
ginger paste
- 1 tsp.
paprika
- 1 Tbsp.
curry powder
- 1/2 Tbsp.
garam masala
- 1/2 tsp.
chilli powder
- 1 tsp.
salt
- 500 g
skinless, boneless chicken thighs, diced
- 2
tomatoes, diced
- 1 Tbsp.
tomato puree
- 200 ml
chicken stock
- 1
potato, diced
- 2
loaves uncut bread, or 4 small boules
- 1/2
red pepper, thinly sliced
Directions
- Step 1In a pan over medium heat, sweat your onions and spices, until the onions are cooked through and translucent. Add in your chicken and brown briefly, 2-3mins, followed by tomato puree and tomatoes. Cook out the tomato puree for a further 3 mins.
- Step 2 Add your stock and potatoes and simmer for 25-35mins until the sauce has reduced and thickened.
- Step 3To serve, cut your loaf directly in half and turn cut side up. Using a knife, cut a boarder around the inside of the loaf and pull out the inside of the bread, reserve for dunking!
- Step 4Carefully ladle your curry into each loaf ‘bowl’, top with sliced red pepper and enjoy!
