Whipped feta with glazed leeks

The perfect tangy bite on the nibbles table

Whipped feta is a seriously gorgeous dip and super easy to make for a sharing dinner party starter. We've loaded ours with glazed leeks, but if you're wanting a much quicker dip to throw together, scrap the leeks and drizzle your whipped feta with good quality extra-virgin olive oil.

Want to make this as part of a breakfast, or lunch? Use the whipped feta as a spread on toast with roasted tomatoes.

Ingredients

For the whipped feta

  • 250 g

    feta

  • 125 g

    cream cheese, room temperature

  • 1 tsp.

    salt 

For the glazed leeks

  • 150 ml

    red wine vinegar

  • 50 ml

    runny honey 

  • Pinch chilli flakes

  • 30 g

    pistachios, roughly chopped  

  • 4-6 thin leeks, cut into 4cm batons

  • 1/4 tsp.

    salt 

Directions

    1. Step 1Preheat your oven to 200ºC (180ºC Fan).
    2. Step 2To make your whipped feta, pulse the feta in the food processor until it resembles small crumbs. Add in the cream cheese and blitz until light, fluffy and smooth, 1-2 minutes. Refrigerate until needed. 
    3. Step 3In a small baking dish, add the red wine vinegar, honey and chilli and stir until the honey is dissolved. Add the leeks, season with salt and turn the leeks in the vinegar to ensure they are nicely coated. 
    4. Step 4Place in the oven and roast for 20 minutes or until the leeks are tender and the glaze is sticky.
    5. Step 5To serve, spoon the whipped feat in your serving dish, top with the leeks, drizzle some glaze and sprinkle with pistachios.
