
When Overnight Weetabix first started getting big on TikTok, we knew this was a trend we were willing to invest in. You're basically building a cheesecake from breakfast ingredients, therefore making dessert for breakfast a proper, rational, justifiable decision. Best. Trend. Ever.
Weetabix acts as a healthier alternative to a digestive biscuit base, and the combination of coffee, banana and peanut butter is breakfast-y while also emitting banoffee pie vibes.
We've made this recipe a single serving, but it can be multiplied, turning it into an easy meal prep breakfast you can grab from the fridge whenever needed.
Feel free to swap out the banana for any other soft fruits: berries, plums, peaches and mango would also be delicious – and the peanut butter can also be subbed out for almond butter or even Biscoff if you’re not so much of a nut fan.

Weetabix
- 2 1/2 Tbsp.
coffee
- 2 Tbsp.
maple syrup
- 50 g
greek yoghurt
- 50 g
cream cheese
- 3 Tbsp.
smooth peanut butter
- 1
small banana
Directions
- Step 1Using your hands, finely crush the Weetabix into a medium bowl. Add coffee and 1 tbsp maple syrup and stir to combine. Transfer to a small-lidded container and spread level with the back of a spoon.
- Step 2In a separate bowl, mix yoghurt, cream cheese, 2 tbsp peanut butter and remaining maple syrup.
- Step 3Peel and chop the banana into 1cm thick rounds. Lay banana slices in an even layer over the Weetabix layer then top with yoghurt mixture. Secure the container’s lid and chill for at least 2 hours, ideally overnight.
- Step 4Before serving, warm remaining peanut butter in the microwave for 30 seconds to loosen then drizzle over.
