Hot honey & ricotta toast

One of our favourite evergreen trends is ricotta toast, slathering creamy ricotta on fancy bread and topping with anything your heart desires. Like Avocado Toast, Ricotta Toast is dead-easy to make, but can be a real showstopper next time you have friends over for brunch. 

Ricotta Toast is great because you can turn it into either a sweet or savoury breakfast, so you can pick and choose your flavours depending on what mood you wake up in on a particular day.

Quick, simple and full of flavour, our ricotta toast is topped with hot honey and prosciutto.

Ingredients

  • 1

    large baguette, lightly toasted 

  • 2 Tbsp.

    olive oil

  • 1

    garlic clove, crushed

  • 200 g

    ricotta

  • 8

    figs, quartered

  • 8

    slices prosciutto

  • Handful pistachios, roughly chopped

  • Small bunch thyme, leaves picked

For the hot honey

  • 100 g

    runny honey

  • 1

    red chilli, sliced or 1/2tsp chilli flakes

Directions

    1. Step 1In a small pan set over a low-medium heat add the honey, sliced chilli or chilli flakes and simmer for 4-5 minutes to infuse.Take off the heat.
    2. Step 2Add the crushed garlic into a small bowl with the oil and mix. Slice the baguette into 4 and then through the middle to make 8. Brush the garlic oil over each of the slices to fully coat.
    3. Step 3Spread the ricotta evenly between the slices of bread then top with the prosciutto and sliced figs. Finish by drizzling with the hot honey, topping with chopped pistachios and mini sprigs of thyme.
