Ingredients

unsalted butter, melted and cooler

soft light brown sugar

large eggs

plain flour
- 100 g
white chocolate chips
- 150 g
dulce de leche or caramel
- 2
digestive biscuits, crumbled
Directions
- Step 1Preheat the oven to 180ºC (160ºC fan). Grease and line a 20cm square loose bottomed baking tin. Mash one of the bananas then halve the remaining two lengthways.
- Step 2In a large bowl whisk together the melted butter, sugar and eggs. Fold through the flour then stir through the mashed banana and white chocolate. Transfer to the lined tin and spread to level.
- Step 3Warm the dulce de leche or caramel in a microwave or saucepan until it has a pourable consistency and drizzle over the top.
- Step 4Arrange the halved bananas cut side up on top of the caramel then scatter over the crushed digestive biscuits.
- Step 5Bake in the middle of the oven for 40-45 minutes until just set then leave to cool in the tin before serving.
