Ingredients
- 200 g
carrots (can use orange, yellow and purple), peeled, cut into quarters then cut in to three
- 200 g
parsnips, peeled, cut into quarters then cut in to three
- 200 g
Brussels sprouts, cut in half and outer leaves removed
- 150 g
red onions, outer skin removed, peeled and cut into quarters
- 200 g
floury potatoes, cut into 1inch pieces
- 150 g
turnip (optional), cut into 1inch pieces
- 1 tsp.
dried thyme
- 1 tsp.
dried sage
- 25 g
vegetable oil
- 1/2 tsp.
each salt and pepper
- 60 g
honey
- 2
bulbs garlic, cut in half
Directions
- Step 1 Pre-heat oven 220ºC (200ºC Fan). Place all the veg in a large bowl and coat in oil, seasoning and herbs. Add garlic bulbs, add to bowl with 40g honey and mix.
- Step 2Place all the veg in a large baking dish, or two, and place in the oven.
- Step 3Cook for 20mins then check on the veg, turning them so they don’t stick and adding the rest of the honey. Put the veg back into the oven and cook for a further 20-25mins.
- Step 4Once cooked, vegetables should look sticky and crispy, serve with your roast dinner.
