
Salted caramel is one of my favourite flavours, and these salted caramel cupcakes are one of my ultimate easy bakes. Taking a basic vanilla sponge recipe, we've added salted caramel sauce for a delicious taste, not forgetting that buttercream icing of course - topped with toffee... YUM!

Ingredients
For the cupcakes
- 200 g
butter, softened
- 300 g
soft light brown sugar
- 3
large eggs
- 1 tsp.
vanilla extract
- 250 g
plain flour
- 3
cornflour
- 1 1/2 tsp.
baking powder
- 1 tsp.
salt
- 125 ml
milk
- 75 ml
salted caramel sauce
For the buttercream
- 340 g
butter, softened
- 750 g
icing sugar
- 1 1/2 tsp.
vanilla extract
- 4 1/2 Tbsp.
double cream
Pinch of salt
Salted caramel sauce, to drizzle

Directions
- Step 1Preheat oven to 180°C (160ºC Fan) and line two muffin tins with liners. In a large bowl using hand mixer (or in the bowl of a stand mixer), beat together butter and sugar until light and fluffy. Add eggs one at a time beating well after each addition. Add vanilla and mix until combined.
- Step 2In another large bowl whisk together flour, cornflour, baking powder, and salt. Add half of the dry ingredients to the wet ingredients, beating until just combined. Pour in the milk and salted caramel sauce and mix until fully incorporated. Add remaining dry ingredients and stir until just combined.
- Step 3Fill cupcake liners 3/4 full with batter. Bake until slightly golden on top and a toothpick inserted into the middle comes out clean, about 25 minutes.Meanwhile, make the buttercream. In a large bowl using a hand mixer or the bowl of a stand mixer using the paddle attachment, beat butter until fluffy. Add icing sugar and beat until combined, then add vanilla, double cream, and salt and beat until combined. (If you desire a thinner consistency, add 1 more tablespoon cream.)
- Step 4Remove cupcakes and let cool completely then pipe frosting on. Drizzle over salted caramel and sprinkle with toffee pieces.
