Monster Mash Cheesecake

Ingredients

  • 300 g

    Oreos, crushed

  • 50 g

    unsalted butter, melted

  • 150 g

    white chocolate

  • 200 ml

    double cream

  • 500 g

    full fat cream cheese, at room temperature

  • 1 tsp.

    vanilla extract

  • 100 g

    icing sugar

  • Purple food colouring

  • Green food colouring

  • Candy eyes and Halloween sprinkles, to decorate

Directions

    1. Step 1Grease and line a 20.5cm (8in) round spring form tin. 
    2. Step 2To make the base, whiz the Oreos in a food processor until finely ground. Add the melted butter and blitz to combine. Tip the mixture into the base of the prepared tin. Press the mixture firmly into the base with the back of a spoon. Put it into the fridge to chill.
    3. Step 3Put white chocolate in a small heatproof bowl and sit over a small pan of simmering water. Stir frequently until smooth and runny, then remove from the heat and leave to cool.
    4. Step 4Using a hand-held electric whisk, beat together the cream cheese and icing sugar until smooth, then beat in the double cream and vanilla until the mixture is thick and just holds its shape. Pour in the white chocolate and stir to combine. Divide the mixture between two bowls.
    5. Step 5Add purple food colouring to the first bowl and stir until you reach the colour desired. Add green food colouring to the second, and do the same. 
    6. Step 6Spoon large dollops of the cream cheese mixture into the tin, alternating between the two mixtures. Drag the back of a spoon through the mixtures to marble and spread to make a smooth, even layer. Chill in the fridge for at least 6 hours or overnight.
    7. Step 7Remove cheesecake from tin and transfer on to a serving plate or cake stand. Peel off parchment paper around sides. Top with Halloween sprinkles and candy eyes to represent the monsters. Serve in slices.
