Who remembers eating turkey dinosaurs as a kid? A school dinner classic, a meal you got SUPER excited about when your mum or dad got them out the freezer. Yes, these cute dinosaur-shaped nuggets evoke some pretty good memories, so we decided to create our own version in homage!

Ingredients
- 1
kg lean turkey mince
- 40 g
panko breadcrumbs
- 1
small bunch Parsley, finely chopped
- 1
carrot, peeled and grated
- 1
small onion, finely chopped
- 1/2 tsp.
garlic powder
- 1 Tbsp.
tomato ketchup
- 2 tsp.
salt
pepper to taste
For the coating
- 100 g
panko breadcrumbs
- 3
eggs, beaten
- 100 g
plain flour
Oil, to shallow fry
Directions
- Step 1Place your turkey mince in a bowl and add the breadcrumbs and the rest of the ingredients. Mix well.
- Step 2Place a layer of greaseproof paper on the worktop and place the turkey mix on top. Lay another layer of grease proof across the top.
- Step 3Using a rolling pin roll the meat out to about 1 cm thick. Place the rolled out mix in the freezer for 30 minutes to set.
- Step 4Remove the mix from the freezer and use dinosaur shaped cutters to cut out the turkey dinosaurs. If you need to you can re-roll the turkey mix again until you have made all your dinosaurs.
- Step 5In three separate bowls place the three eggs, flour and remaining 100g of breadcrumbs.
- Step 6Take each dinosaur and firstly dip in the flour, shake of any excess, then dip in the egg mix and finally dip into the breadcrumbs ensuring the dinosaur is fully coated.
- Step 7Heat your oil to approx 160ºC and shallow fry for approximately 2 minutes each side. Serve with anything you like, but for true nostalgia, we love spaghetti hoops and chips.
Please be extremely careful when frying with oil. Leave oil to cool completely, and do not throw down the sink.
