While you're probably familiar with the classic Aperol Spritz, you might not have tried the drink's cooler cousin: a Campari Spritz. It's got all the bright colour and bittersweet flavour but with a fun retro, sophisticated edge. We'd also say a Campari Spritz is less sweet than Aperol, so if you're feeling a bit *done* with Aperol this summer, then the Campari Spritz is the drink for you. 

Our recipe uses just five ingredients, so it's mega easy to achieve. The orange wedge and olives on a stick give it proper holiday vibes, but you could easily switch out the orange for grapefruit if that's what you've got to hand.

What is Campari?

Campari is a bitter-tasting Italian liqueur. It's also known as an aperitif or aperitivo, which means you usually drink it before dinner. It's made by infusing water and alcohol with fruit and herbs, resulting in the bright red colour and herbal, slightly sweet but usually bitter taste.

What's in a Campari Spritz?

Typically, a Campari Spritz is made with Campari, sparkling Italian wine like Prosecco and a splash of soda water. In Italy, you can find the similar drink Campari & Soda, which is the same as a Campari Spritz but without Prosecco, making it a lighter drink. The traditional garnish is a wedge of orange and sometimes a few olives.

What's the difference between Campari and Aperol?

Campari and Aperol are both aperitivos used in Italian-style cocktails. They're also made in a similar way, infusing water and alcohol with fruits and herbs, but their exact recipes differ (as you might be able to guess by their distinct colours). Aperol is made with bitter rhubarb, vegetal gentian root, and cinchona (a type of tree bark), and has strong citrusy undertones. Campari's exact recipe is kept under lock and key, but it tastes far less sweet and citrusy.

What are some other Prosecco cocktail recipes?

Prosecco cocktails are usually fresh, fruity and easy to make. You could have a go at a Limoncello Spritz, Hugo Spritz or a classic Aperol Spritz to use up that bottle of Prosecco.

What food goes with a Campari Spritz?

Traditionally, cocktails like a Campari Spritz are served with nibbles like olives, crispy snacks and cured meats.

Ingredients

  • 50 ml

    Campari

  • 75 ml

    Prosecco

  • 25 ml

    soda water

  • 1

    orange slice

  • 3

    green pitted olives threaded onto a cocktail skewer

Directions

    1. Step 1Fill a large wine glass with ice, then pour over the Campari, Prosecco and soda water.
    2. Step 2Stir gently with a cocktail stirrer, then garnish with the orange slice and olives.
