Ingredients
For the mint tea simple syrup
- 200 g
caster sugar
- 250 ml
water
- 2
green tea tea bags
- 1
large handful of mint
Peel of 1 lemon
For the martini
- 60 ml
vodka or gin
- 25 ml
dry vermouth
- 120 ml
mint tea simple syrup
juice of half a lemon
ice
lemon peel for garnish
Directions
- Step 1In a saucepan placed over a medium heat, add the sugar, water, tea bags, mint and lemon peel. Stir to combine and bring to a gentle simmer. Once simmering, remove from the heat and leave to infuse for 10 minutes.
- Step 2Remove the lemon peel, tea bags and mint so you are left with a clear minty simple syrup. (you will make more simple syrup than you need, so simply add to an airtight bottle and it should keep for up to 3 months)
- Step 3To make the martini, add the vodka, dry vermouth, mint tea simple syrup, lemon juice and large handful of ice to a cocktail shaker. Shake for 30 seconds and serve in a glass with a twist of lemon peel. Enjoy!
