
These margarita cookies were inspired by my love of the salty and sweet combination. A dish or bake doesn't seem complete without having the sweetness offset by salt or the savoury element given a hit of sugar. These cookies do this beautifully with their zesty middle and sugar and salt coating.
Like with the cocktail, as you take your first sip, your mouth gets an explosion of salt then a hit of zest. The dough is flavoured with orange and lime zest for a sweet, zesty centre before being rolled in sugar and salt. As they bake, the savoury crust hardens so you end up biting through the savoury like crust into the doughy cookie. Yum!

Ingredients
- 150 g
softened butter
- 75 g
light brown sugar
- 75 g
caster sugar
- 1 tsp.
vanilla extract
- 1
medium egg
- 250 g
plain flour
- 100 g
white chocolate chips
zest of 1 lime
zest of 1 orange
- 14
giant white chocolate buttons
For the margarita coating
- 6 tsp.
caster sugar and 2tsp salt combined together in a bowl
Directions
- Step 1In a large bowl, add the butter, light brown sugar and caster sugar. Using an electric whisk, beat until light and fluffy. Add the vanilla extract and egg, stir to combine.
- Step 2Add the plain flour, white chocolate chips, lime and orange zest. Stir until you have a thick cookie dough. Cover the bowl and place in the freezer for ten minutes or until slightly hardened.
- Step 3Preheat oven to 200°C (180°C Fan) and line two baking trays.
- Step 4Take a heaped teaspoon of the cookie dough, flatten into the palm of your hand and add a chocolate button to the centre. Roll into a ball then place on the baking tray. Repeat with the remaining mixture and white chocolate buttons.
- Step 5Roll each cooking in the sugar and salt margarita mix and place well apart on the baking trays. Bake for 8-10 minutes or until flattened and still soft in the middle. Leave to cool on the tray for 5 minutes then move to a cooling rack. Enjoy!
