Ingredients
- 4
brown onions, ends and skin removed
- 50 g
butter
- 2
sprigs of thyme
- 50 ml
white wine vinegar
- 40 g
sugar
pinch of salt
- 160 g
ready rolled puff pastry
Directions
- Step 1Preheat the oven to 200°c (180°c) and grease a muffin tin with melted butter.
- Step 2Using a glass or biscuit cutter, cut out rounds big enough to fit over the top of each muffin tray. Place into the fridge until needed.
- Step 3Slice the onions in halve so you have two thick onion ring like discs.
- Step 4Place a frying pan over a low to medium heat and add the butter. Once melted, add the onions and thyme. Cook undisturbed for 6-8 minutes or until starting to turn golden brown.
- Step 5Flip onions and cook for a further 5 minutes.
- Step 6Carefully transfer each onion disc into the holes of the muffin tin and top with the puff pastry. Bake for 15 minutes or until the pastry is puffed and golden. Turn out, serve and enjoy.
