Sauerkraut Fritters

If you're obsessed with sauerkraut, you have to make these fritters. Whipped into a light batter along with herbs, smoked sausage and cheese, it transforms this fermented cabbage from a side dish into the perfect snack to whip up for your Eurovision party.

Ingredients

For the fritters

  • 150 g

    plain flour 

  • 1/2 tsp.

    baking powder 

  • 1/2 tsp.

    salt 

  • 2 tsp.

    dill, finely chopped 

  • 2 tsp.

    parsley, finely chopped 

  • 1 tsp.

    smoked paprika 

  • Zest 1/2 lemon 

  • 200 g

    sauerkraut, drained 

  • 2

    spring onions, roughly chopped 

  • 100 g

    German smoked sausage, chopped 

  • 50 g

    smoked cheese, grated 

  • 100 ml

    milk

  • 1

    egg, beaten 

  • 3 Tbsp.

    vegetable oil, for frying 

For the sour cream dip

  • 5 Tbsp.

    sour cream 

  • 1/2

    garlic, crushed 

  • Juice of 1/2 lemon 

  • 1/2 tsp.

    dijon mustard 

  • 1 tsp.

    dill 

  • 1/4 tsp.

    black pepper 

  • 1/4 tsp.

    salt 

Directions

    1. Step 1In a large bowl, add the plain flour, baking powder, salt, dill, parsley, smoked paprika, lemon zest, sauerkraut, spring onion, sausage, cheese, egg and milk. Stir until the flour is combines and you have a thick fritter batter. 
    2. Step 2Place a frying pan over a medium heat and add 1 tbsp oil. Spoon heaped tablespoons of batter into the pan and cook for 2-3 minutes a side or until golden brown and cooked through. As you cook the batches, add another tablespoon of oil as you go. (Ensure not to overcrowd the pan and cook the fritters in batches of 3-4.) Drain onto kitchen paper. 
    3. Step 3To make the sauce, simply add all the ingredients into a bowl and stir to combine. 
    4. Step 4Serve the fritters alongside the sauce and enjoy!
