King Charles' Cheesy Baked Eggs

If you're looking for a brunch fit for a King (and to celebrate the Coronation) you can't go wrong with King Charlie's actual fave. Cheesy baked eggs. Back in 2020 Clarence House shared a recipe on its Twittter account for the then Prince Charles' fave Cheesy Baked Eggs in honour of the British Cheese Weekender, an online festival celebrating delicious British cheese.

King Charles has long been a big fan of British cheese, with his wife Camilla previously revealing “He loves, loves local cheeses. He’s a huge cheese fan. Anything to do with cheese, he will love.” So it seems like this recipe is a no brainer for him!

The recipe includes seven different ingredients including spinach, tomatoes, and two different types of cheese. ICYMI: Charles maintains a pretty impressive organic garden, so we can only assume his spinach and tomatoes come from there, but we're also sure supermarket, non-royal veggies will work too!

The original recipe is for one, but we've upped to four because this is a brunch you should definitely be sharing.

Ingredients

  • 400 g

    spinach, wilted

  • Handful cherry tomatoes, quartered

  • 140 g

    strong, soft cheese

  • Charcuterie (optional)

  • 4

    eggs

  • 320 ml

    double cream

  • 60 g

    strong, hard cheese, gratedr

  • Basil leaves, torn 

Directions

    1. Step 1Butter a small oven-proof dish, line with wilted spinach and make a well in the bottom. Next, place your quartered cherry tomatoes on top of the spinach.
    2. Step 2Dot the soft cheese around the dish amongst the tomatoes and then add your torn basil leaves. If you have opted to include charcuterie, then add this too. 
    3. Step 3Season with salt and pepper.
    4. Step 4Crack your eggs into the centre of the spinach, then pour your double cream over the eggs (try not to break the yolk).
    5. Step 5Sprinkle on your grated hard cheese then place in the oven 200ºC (180°C Fan) for 8-10 minutes.
    6. Step 6Once taken out of the oven, let it stand of a few minutes, then enjoy with some toasted sourdough!
