You NEVER need an excuse to eat cake. It's a dessert that's as classic as can be. There are a ton of different ways to bake a cake, but Lady M's mille crepe cakes are on a whole other level.

First of all, this cake has 40 layers. That's right—4-0. When I cut into a slice with my fork, I could feel my fork hit every single layer. Second, it's made entirely of handmade crepes and cream. The crepes have simple batter, but are made using a secret method to get them paper-thin. The pastry cream is light and fluffy with a hint of liquor to give it little extra kick.

One of Lady M's original pastry chefs, Chef Manami Narita, demonstrated how the cakes are made and the dedication, precision, and care that goes into just one cake. If a crepe was wasn't perfect, she didn't use it (...and I ate it). Watching her build a cake is mesmerizing. It begins with a crepe so thin you can almost see through it. Next is a generous dollop of cream that's smoothed down with an icing knife...repeated 38 times.

Their signature cake is their most famous and their simplest one. It's sweet, creamy, and melts in your mouth. If you're not already full, you can choose from one of their other flavors like Green Tea, Chocolate, and Chestnut. Every month or so, they have a new seasonal cake. The fall flavor was Tiramisu and it was so popular, it'll be available through the end of the year.
