When it comes to fall squash, butternut squash can often get all the attention. Here at Delish, we think that delicata squash is the underrated variety that deserves the spotlight on your fall dinner plate. Its small size makes it much easier to handle than other types of squashes, and it cooks much faster. When roasted, the squash gets creamy and sweet, and takes to sweet and savory flavors—we went savory here, but you can really get creative with it! Should I leave the skin on delicata squash?
We prefer to! Delicata's skin is perfectly edible, and after cooking it becomes tender and absolutely delicious. Be sure to wash the squash well before roasting as the skin is usually coated in a wax used for preserving the squash.
How should I season delicata squash?
Like most squashes, delicata squash takes to both sweet and savory spices. Tossing the squash in curry powder is our favorite way to roast it, but we also love sprinkling cinnamon over it too if we’re craving a sweet twist.
Serving ideas.
Ready in 30 minutes, this squash is the perfect easy fall side to add to any meal. Add it to your Thanksgiving dinner spread, or serve alongside your fall dinner of pork chops and apples or creamy pumpkin and Parmesan chicken skillet.

Ingredients

medium delicata squashes, scrubbed clean
- 2 Tbsp.
extra-virgin olive oil
- 1 tsp.
curry powder
Kosher salt
Freshly ground black pepper
Directions
- Step 1Preheat oven to 425°. Cut ends off of squash, then cut in half lengthwise. Scoop out seeds. Cut squash into ½” half moons.
- Step 2On a large baking sheet toss squash with oil and curry powder. Season with salt and pepper.
- Step 3Roast until golden and soft on the inside, about 20 minutes, flipping halfway through.
