Time for some true confessions: I am a biscuit fiend. I like them with pimento cheese baked in, eggs in the middle, and jam on top. Give me one with hot chicken and honey on it and I will absolutely fall apart (maybe it's the Oklahoman in me …). I've been baking them for years, but there's a little-known secret that I've been keeping to myself for quite some time. Turns out, the best biscuits out there have a secret ingredient, and it's time the world learned the truth. It's Greek Yogurt, baby, and if your biscuits don't have it, you're doing it wrong.

This isn't the first time someone has swapped Greek yogurt for another, more high-profile ingredient (this two-ingredient pizza dough is a weeknight dinner game changer), and it certainly won't be the last.

Use plain Greek yogurt instead of buttermilk in the recipe, making an even, 1:1 swap like the bloggers at Two Peas And Their Pod did. It provides the same tangy flavor, and you won't need as much butter as you'd normally use. Now, only a monster would make biscuits without butter, but swapping Greek yogurt does offer the added benefit of a lightened-up recipe. It also doubles the amount of protein in the dish — buttermilk has about 8 grams per cup, whereas Greek yogurt has 17 grams, according to USDA data.Turns out, nutritionists are fans of the swap, too. When it comes to subbing lighter options for baked good ingredients, registered dietitian Heather Steele said healthy hacks can go a long way.

"This is what I preach to my clients every day," Steele insists. "I'm a Greek yogurt fanatic."

"If you're getting a nonfat Greek yogurt, there obviously won't be any fat in it, like there would be with butter or buttermilk. Greek Yogurt also has a lot of protein in it," she confirms, "which offers a great nutritional boost to your meal."

High-profile foodies have been loving the Greek yogurt biscuit trend, and who could blame them? Using Greek yogurt also lets you skimp on other ingredients, meaning your perfect dough comes together in a pinch. Some recipes have even cracked the code on simple, perfect, golden biscuits that only require two ingredients: equal parts Greek yogurt and self-rising flour. It doesn't get simpler than that.
