What could Sweet Potato Hash accompany?
You don’t necessarily have to focus on a time of year. You could make this for any occasion; casual weeknight dinner, thanksgiving side, potluck you get the idea. If you want to accompany this with a summertime steak dinner that would be great. You could also turn this into a breakfast eggs in hash skillet situation. This would certainly go beautifully with a roast chicken during those colder days.
How long will this keep for?
This is a great recipe to make ahead. This will be good for up to 5 days in a sealed container. Pop this back in the oven and reheat slowly when you’re ready to enjoy.

Ingredients

large sweet potatoes, peeled and chopped
- 2
bell peppers, chopped
- 1
large onion, chopped
- 3
cloves garlic, minced
- 3 Tbsp.
extra-virgin olive oil
Kosher salt
Freshly ground black pepper
- 1/4 tsp.
paprika
- 3
sprigs rosemary
- 6
slices bacon, chopped
Freshly chopped chives, for garnish
Directions
- Step 1Preheat oven to 425°. On a large rimmed baking sheet, toss sweet potatoes with bell peppers, onion, garlic, and oil. Season with salt, pepper, and paprika. Scatter rosemary and bacon on top.
- Step 2Bake until sweet potatoes are crispy on the outside and tender on the inside, about 45 minutes, shaking the pan halfway through.
