Root Veggie Latkes with Mango Chutney

Make a batch of root veggie latkes (recipe below) and top with anything you like — try mango chutney with ham, apple and green onions.

Onto a clean kitchen towel, grate 1 peeled medium russet potato. Squeeze very dry. In a large bowl, combine the potato with 1 small peeled sweet potato, grated; 1 small peeled carrot, grated; 1 large egg, beaten; and 1/2 teaspoon each salt and pepper. Spray 1 large cookie sheet with nonstick cooking spray. Scoop mixture by heaping tablespoons onto sheet, 1 inch apart. Flatten to form even disks; spray generously with cooking spray. Bake at 425°F 30 minutes or until browned and crisp, turning over once with stiff, thin spatula. Serve immediately or store at room temperature up to 3 hours. Reheat in 375°F oven 7 minutes. Makes 2 dozen.

Tortillas with Creamy Shrimp Salad

Easy shrimp salad (recipe below) makes a crowd-pleasing app —scoop it up on a tortilla chip sprinkled with almonds and chives.

In a food processor, pulse 1/4 cup fresh parsley; 1/4 cup mayonnaise; 2 cloves garlic, coarsely chopped; 1 tablespoon lemon juice; 1/4 teaspoon smoked paprika; 1/4 teaspoon cayenne (ground red) pepper; and 1/4 teaspoon salt until chopped, scraping as needed. Add 12 oz. cooked, shelled shrimp, chopped; pulse until just finely chopped, stopping and stirring often. Makes 2 1/2 cups. Refrigerate, covered, up to 1 day.
