Why is it that when you're out a restaurant and someone orders fajitas, everyone turns around to watch the fajitas get delivered to the table? Is it that deafening sizzle? That smoking spectacle? The smell of searing onions and peppers?
Does it matter?
The fact is, people die for fajitas for all of those reasons. (It's kind of like seeing a celebrity. Say, Zac Efron. In a swimsuit.) Fajitas are basically Mexican stir-fry: it comes together in no-time flat and feels surprisingly healthy. (There's also something about the smell of caramelized onions and peppers that just puts me in an amazing mood.) It's just a great equalizer—folks of all ages seriously love them.
What makes it the perfect dinner-party food—that everyone can make their own version, top it however they like—kind of makes it an annoying weeknight dinner. (Who has time to dice up, shred, chop, and put out a thousand toppings?) So we whipped up this much easier version that can be worked into your weekday schedule.
The thing that makes this dish so awesome is the mix of textures. We combined the veggies and chicken with a layer of melty cheese, then topped the whole thing with crunchy baked tortilla strips. (In a pinch, you could easily use crushed tortilla chips straight out of the bag—we will not judge.) The whole thing scoops like a casserole, but tastes like you wrapped each one yourself.
