Every holiday season, you swear your December won't be summed up as scrambling—to the post office, to buy that last gift, to write those holiday cards—and yet, it inevitably happens. You say yes to a holiday party, White Elephant Gift Exchange and Ugly Sweater soiree all in the same week, you promised you'd join in your friend's cookie swap, you agreed to that last-minute project at work.

You're overbooked, and there's no time to bake. But you still want to bring on the holiday spirit with a batch of homemade cookies.

You don't have to go shopping for ingredients—there's a good chance you probably have flour, butter and sugar in your kitchen already—and they're little more effort than baking break-and-bake cookie dough from the grocery store: Just stir, spoon onto a baking sheet and pop them into the oven. Oh, and set a timer, so you don't burn the batch while you race to wrap gifts, decorate your tree and call your mom during the 15 minutes they're baking. 

These cookies are so buttery they're almost shortbread-like, but the chewy center and crisp edges are unmistakably sugar cookie-esque

One batch makes 12 palm-sized cookies, but you can easily double (or triple) this recipe to serve to a larger crowd. When stored in a resealable bag or container, they'll keep for over a week too—provided they last that long without people gobbling them up.

Of course, if you want to give them a little extra swagger, you can always top them with sprinkles or M&Ms before baking, or drizzle them with melted chocolate or frosting once they've cooled from the oven.
