They might not be magical, but these four Lucky Charms desserts are still pretty darn delicious.
1. Cupcakes
These cute cupcakes have Lucky Charms in place of the usual sprinkles—inside and on top!
To make the cupcakes: Mix up 1 recipe Yellow Cupcakes or 1 box yellow cake mix. Stir in 1 cup Lucky Charms cereal (about ½ cup crushed plain cereal pieces and ½ cup of the marshmallows). Bake as directed. Tint your favorite Vanilla Buttercream Frosting green with food coloring (if desired) and pipe onto cooled cupcakes. Sprinkle with more Lucky Charms cereal and serve.
2. Cereal-and-Marshmallow Treats
Just as easy as classic Rice Krispies Treats (but with extra, super festive marshmallows!).
To make the treats: In a large saucepan over medium-low heat, melt 5 tablespoons unsalted butter. Add 1 (10-ounce) bag marshmallows and stir continuously until melted. Stir in 6 cups Lucky Charms cereal and turn off heat. Spread mixture evenly into a greased 9- by 13-inch glass baking pan and let cool completely before cutting and serving.
3. Milkshakes
This tastes just like the sweet milk leftover after you finish your bowl of cereal! (But this has ice cream in it, so obviously, it's even better).
To make the milkshakes: Add 6 scoops vanilla ice cream, 1 cup milk, and 1 cup ice to blender. Pulse to combine until ice is crushed and the milkshake has reached your desired consistency. Add in 2 cups Lucky Charms cereal and pulse a few more times until just blended. Pour into glasses, top with more Lucky Charms, and serve. (Makes 2-3 milkshakes, depending on glass size.)
4. Pudding Pie
The bright green filling in this pretty pie is nothing but vanilla pudding and food coloring—it really couldn't be easier!
To make the pie: Finely crush 2 cups plain Lucky Charms cereal (remove the marshmallow pieces for this part). Add to a large mixing bowl along with 1/4 cup all-purpose flour. Using your hands, a pastry cutter, or a fork, blend in 6 tablespoons cold, unsalted butter (there will still be lumps; the mixture should feel like wet sand). Then carefully mix in about 3 tablespoons ice-cold water, until mixture comes together and forms a dough. Wrap in plastic and chill at least 30 minutes in the refrigerator, then press into a 9-inch pie dish and bake at 350 degrees F for 15-20 minutes, until just golden. Make up1 package JELL-O Vanilla Instant Pudding, according to package instructions, tint green with food coloring, and pour into cooled pie crust. Top with whipped cream and sprinkle with more Lucky Charms.
