This time of year, I get SO excited about all the fresh produce that I sometimes go a little, shall we say…overboard. That’s no problem when I’ve overbought sweet corn or peaches, but a massive bunch of herbs that smelled so good at the farmer’s market? That’s just compost waiting to happen. This summer, I’m endeavoring to have less waste, particularly of gorgeous herbs, and these 10 green goddess recipes are definitely going to help. Not only are they all fresh and bright, they’re also super versatile, so I know that no matter how much extra basil or parsley I’m sitting on, they can take it.

And I’m not just talking about green goddess dressing either, though ours is killer, and so is our copycat Trader Joe’s green goddess salad dressing and the dressing on our Panera Bread green goddess Cobb salad too. Instead, these recipes are proof that you can absolutely break outside the salad box with your herby dressing. Check out our green goddess meatballs (with dressing within the ground chicken, not just on top!), our green goddess grilled chicken (ditto—we marinate and drizzle it over top here too), our green goddess gnocchi, our green goddess pasta salad… we’re pretty sure it would be great on nearly anything, so feel free to just make the dressing from any of these recipes, then get creative with what you do with it.

This is an ingenious chopped salad that is filled to the brim with green veggies: everything from a green cabbage base to a spinach-packed dressing all contribute to the greenness. The whole thing comes together in minutes and ends up resembling a chunky guacamole, so we recommend tortilla chips for dipping. Eating a salad with chips?! BRILLIANT!

Green Goddess Soup

While most green goddess salad dressings rely on mayonnaise and one to two herbs for their creaminess and pale green color, we achieve the same flavor profile by using kale, cauliflower, four different herbs, and just a touch of Greek yogurt. The result? A vibrant green soup that’s pretty much a garden in a bowl.
