Every Passover, without fail, we can't wait to dive into a bowl of chicken matzo ball soup Not to step on the classic soup's territory, but there's so many other Passover-friendly chicken recipes out there to consider for your holiday spread (especially if you can’t stomach any more matzo!). So we’ve rounded up 26 of our favorite kosher-friendly chicken recipes here to help you change things up for Passover—keep them in your pocket for all year-round too!

If you’ve been celebrating Passover your whole life, we’ll assume you’re already aware of and comfortable following the particularities of Jewish kosher law. For everyone else, a brief, simplified explanation: Passover celebrates the exodus of the enslaved Jewish people from Egypt, who left in such a hurry they didn’t have enough time to even let their bread rise, and only were able to bring unleavened, cracker-like bread called matzo with them. Today, Jewish people continue to remove chametz (or any leavened flour products like bread or cake) from their diets for the duration of Passover. In addition, they must continue to follow general Kosher rules (meat and dairy can’t be eaten in the same meal, though fish and eggs are considered neutral, or pareve; no pork products; no kitniyot, or legumes, for some families; etc.).

Phew! It can seem like a lot, but trust us, it gets much easier if you go into the week prepared with great recipes. Some of the ones here might need minor adjustments (removing corn or beans if you don’t eat kitniyot, for example), but plenty are perfect as is. We’ve got everything from old-school classics like chicken marbella or chicken cacciatore (including a slow-cooker version), to modern recipes like our one-pan coconut lime chicken or our sheet-pan harissa chicken & potatoes. Give them a try and let us know what you think in the comments below.

ANDREW BUI

As the origin story goes, this dish emerged as a means to feed hunters who’d been away tracking for long periods of time, using the meat, mushrooms, and herbs they’d collected along the way. While we may not have been out hunting, after a long day this dish is still particularly comforting, not in the least because it all comes together in one pot.

In the world of powerhouse pantry staples, harissa is a flavor bomb. We've already used it to spice up turkey breast and meatballs—and now we’re tapping it again for this easy, throw-together marinade for grilled chicken. Our top tip? Make sure to remove and save some of the marinade (we recommend ⅓ cup) before adding the chicken to the rest of it.
