Borsch is a polarizing food — you either love it or you hate it. According to NPR's food blog, the Salt, Sochi Olympic Winter Game organizers are banking on the former because they expect to serve a truly impressive 70,000 gallons of the beet-laden soup at this year's games. We're thinking that has got to be some kind of record! The traditional soup typically contains beets, potatoes, tomatoes, and meat (usually beef or pork). It can be served hot or cold. There are many different versions and customs when it comes to preparing a "proper" bowl of borscht, and the Winter Games masses are sure to eat their fair share of the regional classic.
