The first time I saw cookbook author Alison Roman's salted butter and chocolate chunk shortbread cookies pop up in my Instagram feed was back in late December, when Deb Perelman of Smitten Kitchen posted her version and touted it as being perfect for "weekend hibernation, or parties, or hibernation parties, which, given the temperatures outside, perhaps needs to be a thing."

Since then, these cookies have popped up on Instagram everywhere from my friends' feeds to the accounts of literally dozens of bloggers I follow. Created by Roman for her latest release, Dining In: Highly Cookable Recipes, which is currently #1 in Amazon's seasonal cooking section, these cookies use salted butter, "just enough flour to hold it together," and chocolate cut into chunks to "prevent chip congregation."

When you look at the 700 plus photos with the #diningincookbook hashtag on Instagram, nearly every other 'gram is of these cookies, which is not surprising considering that, in Roman's opinion, these are "way better than a chocolate-chip cookie." If it weren't for the sheer volume on Instagram, the rave reviews are enough to convince me that these are worth baking.

Claudia from The Brick Kitchen called them, "buttery and rich, crispy edged and uniquely addictive," while Instagram user megjstudios said they were like the "chocolate chip cookie's European cousin," which sounds decadent and so delicious.
