We live in a new and exciting world. Pasta can be replaced with spaghetti squash, avocado is the new mayo, and pancakes can be entirely made out of bananas. How lucky we are to be alive right now!
Now it's time to welcome cauliflower rice to the food mash-up table. It's blowing up on Pinterest, and it literally looks exactly like the normal grainy white rice we all know and love.
So what exactly is cauliflower rice and how is it changing the rice pudding game?
To make cauliflower rice all you do is grab a medium head of cauliflower, trim the leaves and remove the core from the head, and then cut it into florets. Go ahead and be sloppy with it. Then place the florets into a blender or food processor and hit pulse 5 to 8 times until the florets are the size of – you guessed it – grains of rice. Easy peasy! It's super quick to whip up and works perfectly fine as a substitute for most recipes that ask for white rice—like rice pudding. Speaking of "rice" pudding...
We've been seeing it everywhere, and are seriously intrigued. now while we can get behind a dessert you can eat at will without guilt, this does sound a little weird to us.
