Just when you thought cupcakes couldn't get cuter than these cookie-dough cupcakes or simplier than these cupcake-decorating hacks, along come these little numbers that'll make you do a double take—and possibly throw the whole dessert universe out of order. Believe it or not, these adorable cupcakes are made with sushi.
Now, before you let your gag reflex kick in and swear these off forever, give us a second to explain. These "cupcakes" aren't actually mini versions of sweet cakes, they're just made to look like them. With no batter, eggs, or sugar, it's clear these tricky treats are just dollops of rice and fresh fish disguised in seaweed "baking cups" to look just like everyone's favorite dessert. What's more: They're way simpler to make than ornate sushi rolls and act as a totally adorable alternative to finger sandwiches and, um tea-cup plates, at your next party.
The secret to these cuties is finding the crimped seaweed cupcake liners called dried nori cups. They're about the size of Reese's Peanut Butter Cup and are available online or at your local international food market. But for those of you who are as obsessed with these cupcakes as we are, you could invest in a nori cup mold and crank them out whenever you need 'em. Other than that, you'll just need a little sticky rice, sushi-worthy fish, wasabi, and whatever embellishments (julliened cucumber, shredded radish, drizzled miso sauce) and you're good to go.
