Two months ago, Chipotle removed GMOs and artificial ingredients from its menu. That is, those affecting your burrito's filling. Now the chain is eyeing the wrap. According to the company's website a new, more natural tortilla will be mass produced—sans a slew of extra, unnecessary ingredients.

Chipotle's tortillas currently contain added artificial ingredients and preservatives. But it makes a bit of sense: Tortillas can be tough to keep fresh, so sodium metabisulfite lengthens their shelf life. They also need to be flexible and stretchy to hold the massive amounts of carnitas, chorizo, salsa, and beans you're loading it up with—that's where monocalcium phosphate comes in to condition the dough.

But the brand would like to instead mimic more traditional recipes, which requires only four or five ingredients: corn flour, oil, water, and salt for corn tortillas, and flour, oil, salt, water, and yeast for flour tortillas. The company's chefs are already working on their version of the original in conjunction with Bread Lab, the New York Times reports, in order to churn out the 800,000–plus tortillas Chipotle hawks each day. Researchers and chefs alike are still tweaking the recipe before they roll out the revamped rounds at restaurants nationwide, so stay tuned for updates on your beloved burritos and tacos.
