Chipotle rarely makes any changes to its menu. But if you live in Kansas City, you can start shaking up your burrito bowls now.
The Kansas City Star reports the Mexican chain is testing out chorizo as a protein in local stores. Chipotle's chorizo will be a sausage that blends chicken and pork with flavors like paprika and garlic, and will be lighter, less greasy, and have a little kick to it. The chain has had a hard time finding ethically raised pork shoulder for its carnitas, but since chorizo uses the whole pig, it will likely be easier. They reportedly tested out chorizo on a breakfast menu at New York airports. (Yes, they tested a breakfast menu. Why on earth is it not everywhere by now?)
Last fall, Chipotle introduced sofritas, a tofu-like protein option for people wanting a meat-free meal, and they pledged to get rid of genetically modified ingredients last month. But other than that, the chain likes to keep things consistent, which is why a brand-new protein is pretty exciting.
If the test is successful, chorizo could go nationwide. Chipotle's corporate chef recommends adding it to a burrito bowl with brown rice, black beans, tomato salsa, sour cream, cheese, and guac. Yes, sorry, guac is still extra.
