I love to cook and bake, but I'm also always a fan of a shortcut. And a traditional Italian cannoli—with its crisp exterior and rich, creamy filling is crazy delicious, but it's also a pretty big undertaking, and not a project I'm willing to set aside a whole day of my weekend for without a really special occasion.
But that's why I was totally thrilled to find this recipe from Lindsay over at the blog Life, Love, & Sugar. She's given us a brilliant way to savor all the sweet flavors of a classic cannoli with almost none of the work. This dessert is so easy to throw together, you can have it assembled in the pan in about 10 minutes, there's no baking required, and of course, you can also make it ahead—so if you've got a holiday party or other get-together coming up this weekend, you can get this seriously impressive-looking dessert ready the night before and have absolutely zero stress the day of. It's really impossible not to see the brilliance in this idea.
Luscious mascarpone filling? Check. Crispy graham cracker layers? Check. Oodles of teeny-tiny chocolate chips? Check. Well, now I know exactly what I'm going to be whipping up in the kitchen this weekend.
