While white potatoes are one of the staples of a Western diet, unfortunately they are not considered paleo. (Cue crying into a box of french fries.) There is a silver lining, though! There are plenty of other delicious veggies that we’ve found are perfect stand-ins for spuds.
Before we get into potato replacers, let’s tackle the why. Potatoes are super starchy and very high in carbs. Carbs = Paleo Enemy No. 1. Secondly, potatoes are very low in protein and fiber, two of the most important factors in a healthy and successful paleo diet. To top it all off, white potatoes have very little in the way of vitamins and minerals. In that category, sweet potatoes are a winner, though they actually contain the same amount of carbs.
If you’re a potato lover like I am, giving them up can be a major challenge. Never fear! We have tons of recipes that replace spuds with much healthier options.
Craving fries? Try these carrot fries on for size. They’re sweet, salty, and just a little spicy. Paired with chipotle mayo, they’re super satisfying and basically guilt free.
Missing your favorite breakfast hash? Swap our home fries for cauliflower or Brussels sprouts! I know it sounds crazy, but both veggies are perfect stand-ins, and just as craveable as your average diner breakfast.
Here at Delish we’re huge fans of smashed potatoes. Both creamy on the inside and crunchy on the outside, they’re pretty irresistible. Did you know, the same technique can be applied to veggies? Some of my faves include smashed brussels sprouts and smashed broccoli. Guilt, be gone!
