When Brittany Williams' husband first bought her an Instant Pot, she was too intimidated to open it. She had asked for a stove top pressure cooker, and had no idea how to use this instant version. "As a busy mama I was already a bit overwhelmed," she told Delish. "Having to think about learning one more thing wasn't high on my agenda.
It sat in the box for weeks before her husband asked if she wanted him to return it. That day, Williams finally used the Instant Pot to make brown rice, and was hooked. Less than a year later, thanks to many home-cooked meals, she's lost more than 100 pounds.
On her blog, "Instant Loss," where she shares healthy recipes and weight loss tips, Williams talks about growing up on a "steady fast food diet" and relying on food to help her emotions. "I was an emotional eater, a bored eater, a TV eater, a binge eater; food controlled me," she wrote.
In January 2017, armed with her new Instant Pot, Williams set a goal to cook dinner every night for a year. Using the pressure cooker helped her save money and time; on nights that she gets home late, when she used to heat up a frozen pizza or have her husband pick up take out, she could now use an Instant Pot to make dinner quickly.

"I'm happy to say that I haven't had my husband bring home dinner at all this year! I've cooked at home every night with the exception of a few special occasion and trips," she said.
While she admits it was hard work getting started, after the first month or two, cooking at home became second nature. Williams now follows a diet similar to paleo — limited grains, dairy, and sugar, and lots of veggies, meat, eggs, and coconut-, avocado-, and almond-based oils and flours.
"It's simple. If it comes from the earth and is unprocessed, I eat it."
She also plans out her meals and grocery shops at the beginning of the week, and uses a blender to make smoothies, salad dressing, and veggie dips. Williams is now down 125 pounds from her peak weight, and down 103 since the beginning of the year.
"This lifestyle is 100 percent maintainable, but it is work," she wrote.
