Everybody loves to watch aspirational content. Perhaps for you, it’s home decor or DIY videos, where you see a very motivated TikToker transform a cruddy dresser into the wardrobe of your dreams. Maybe it’s a cleaning video of a sped-up human zooming around a room, piling dirty laundry into baskets and vacuuming up the carpet. My personal brand of “Damn, that looks good. I should do that” is watching Gen Zers fill up crystal-clear glasses with coffee ice cubes, homemade lavender-infused oat milk, and honey syrup before gently stirring to marble all the layers together. (But seriously, who ever remembers to make ice from their leftover coffee, let alone infuse a flower into milk?!)

I might enjoy watching those, but I'll likely never follow suit—they take way too much effort! This is the case with many TikToks—they're aspirational, tucked away in your favorites folder for some better, future version of yourself.

But Emily Mariko, TikTok’s current queen of bountiful farmers' market hauls and good-for-you cooking content, has turned her easy leftover lunch into something everyone is trying.

For dinner, she bakes salmon in the oven and, like all her meals, it looks healthy and delicious. Then, for lunch the next day, she makes her now-famous salmon rice bowl.

Here's how it goes: First, she flakes leftover salmon and adds to a bowl with a mound of cooked white rice. Then she places an ice cube on top followed by a pre-cut sheet of parchment paper, and microwaves it all. Magically, the ice cube doesn’t melt, a fact that is blowing TikTok’s mind. After microwaving, Emily tops the plate with soy sauce, sriracha, and kewpie mayo, mixes it all together, and enjoys it with avocado, kimchee, and seaweed.

Seeing her wrap the seaweed around a slice of avocado and a bit of rice before sliding it into her mouth and smiling with a nod of approval gives the same energy as Facetiming with an old friend. It’s pure and so joyful. Which is why everyone is actually trying this trend, too. It strikes the balance of aspirational content that's attainable—plus, everyone has leftovers and a curious mind to see if the ice cube really doesn’t melt. If you search #emilymariko or #salmonricebowl on TikTok, you'll find hundreds of videos of people recreating the salmon rice with glee and ease. Some people follow her recipe to a t, while others riff, and some have even made parodies (how you really know you've made it).

It seems that once you watch Emily Mariko, you never stop. Her videos are soothing, delicious, and so pleasing to watch. While most of her videos center on her meals and grocery shopping, she also posts about cleaning and fitness. But something we'll always watch on repeat is her making that salmon bowl.
