If you're anything like me, you pretty much always have cheese on the brain. Charcuterie boards, mac and cheese—it doesn't matter, I am into it. But the mother of all cheesy, beautiful things is queso. Never am I happier than dipping a crunchy tortilla chip into a vat of queso. So that's why when I heard about this plant-based queso sold at Costco that was sweeping the internet, I was skeptical, but I knew I had to give it a try. And let me tell you, I am SO glad I did.
Good Foods Plant Based Queso Style Dip arrives looking just like your typical container of queso. It's bright yellow and even smells like delicious creamy cheese. Still, when I first cracked it open, I had my reservations. We've all been burned before by plant-based "meat" that was more akin to a rubber boot than a burger.
But this was most decidedly not that. It was simultaneously thiccc and also just thin enough that you didn't have a glob of queso on your chip. I had a chip...then another...then another...then I called co-workers over to try it. None of us could believe that this wasn't made of cheese. But in fact, this stuff was made with cauliflower, red bell peppers, almonds, apple cider vinegar, red onions, and nutritional yeast. No cheese in sight.
Truly, it smells like cheese, it tastes like cheese, it looks like cheese, but it's not! You could put this out on your Super Bowl table and even the biggest Green Bay fan would be fooled. We all loved it.
We tried these out with plantain chips, but you could dip anything in this. I also weirdly REALLY want to put this on a baked potato, don't ask me why. Good Foods provides a whole list of options including putting this on pasta, zoodles, and even meat. It's safe to say I'll be trying this on everything.
