There’s nothing quite like eating your feelings via a pint of ice cream or jar of cookie butter. (Just me?) But Lotus Bakeries, creators of Biscoff cookies and cookie butter, is expediting this time-honored tradition. The company is releasing its very own cookie butter ice cream in July.
Not only will *six* different flavors be available (Original, Chocolate Brownie, Salted Caramel, Belgian Chocolate Chip, and Blueberry Cheesecake, oh my!), but a Lotus Biscoff ice cream bar will also be hitting shelves in October. Spoiler alert: It’s covered in cookie butter. Per a press release from the company, the cookie bars are “heaven on a stick,” and I’m inclined to believe them.
The ice cream itself sounds straight-up to die for. Not only have crunchy bits of Biscoff cookies found their way into the ice cream line, but swirls and layers of the company’s signature cookie butter will be all up in there as well. (Step aside, sundaes made with regular cookies and chocolate syrup.)
According to the press release, this decadent dessert will be avail at Safeway and Albertsons stores in Northern California, Oregon, Idaho, and Arizona with “many more chains” following the initial launch. If that wait sounds extra, consider the fact that the Cookie Butter Ice Cream has, per Cosmopolitan UK, existed in Europe for years.
However, the long and arduous wait for U.S. cookie butter enthusiasts is almost over. After injecting cookie butter into everything from cheesecake to cream cheese, ice cream’s day has arrived. Once here, the real work begins: Which flavor are we losing ourselves in first?
