Cinco de Mayo is a mere week away, which means soon we'll be gorging on tacos, tequila, and...guacamole cheese? Yep, you read that right. The Fresh Market is launching a green-hued guac-inspired gouda and the possibilities are endless: shred it on tacos, melt it into queso, try it on nachos. Maybe all of the above?

The Amanti Guacamole Cheese will debut in the chain's 161 supermarkets beginning Wednesday, May 1 and will remain on shelves for a limited time. Though given its inevitable popularity, I can't imagine it'll last long. The cheese is blended with avocado, lime juice, chili, tomato, onion, and garlic and looks so gouda—sorry, the pun was necessary.

The guacamole cheese will retail for $24.99/lb, which is pricy, but we all know guac is extra. According to a rep for the brand, the Mexican styled Dutch Gouda "has a smooth texture and rich creamy guacamole taste." The Daily Dairy Holland product is made from 50 percent full fat cow milk and is available for purchase in a variety of sizes. While personally, I have a more the merrier philosophy when it comes to food (especially cheese!) you can purchase it as a full wheel or have it sliced to buy in wedges by the pound.

Need a little inspiration for how to serve it up? We've got over 30 Cinco de Mayo recipes just begging for a little guacamole cheese. Okay, maybe not the margarita, but practically everything else.
