Trader Joe's knows the way to our hearts—and more often than not this year, it's through cauliflower. The starchy veg has taken over as a base for pizza crust, pasta, stuffing...you name it, cauliflower's gotten involved. And to finish the year strong, the budget-friendly grocery store is using it as a sub for one of our favorite winter carbs: potato pancakes.

This November, TJ's started adding Cauliflower Pancakes to the frozen aisle, and the cute little six-packs are ideal for anyone trying to make Hanukkah a teensy bit lighter this year. Or, for non-Jews like me who just love latkes. No shame in your frozen food game, people.

Per Trader Joe's Instagram post, the pancakes are made by an Italian supplier that uses riced cauliflower held together by starches and rice flour (there's no wheat flour, so these are also gluten free) to form the base, seasoning the patties with leeks and Parmesan.

Before they're frozen, the latkes are lightly fried in sunflower oil, making reheating them simple; pop them in the oven or heat them in a skillet on the stovetop for a few minutes before serving. Each box comes with six pancakes for just $4. They're a seasonal item, so get 'em while you can!
