Guy Fieri and his son, Hunter, joined in on Shark Week, heading to the Bahamas to learn more about sharks and experience local cuisine. In a clip from the Shark Week special, Guy Fieri's Feeding Frenzy, Guy and Hunter are aboard a boat, where they quite literally watch ceviche be prepared (and then eat it, of course).

Neil Watson, the boat captain, explains that the most important ingredient in ceviche is fresh fish — as he gestures to the very obviously freshly-caught fish on the countertop. Turns out, it's a Lionfish, which is highly venomous. Neil says he caught it by manually spearing, and I am impressed.

Neil goes on to "fillet the fish" and remove its barbs, and then he cuts it (at which point it begins to look like the fish I buy at the store). Guy and Hunter watch as he adds citrus, onion, and peppers. He tosses it in a Ziploc bag, proclaims "Nothing fancy around here!", and then they scoop up their first taste with some crackers.

The verdict? "Ceviche with a kick!" Guy says.

We may not all get the chance to make ceviche on a boat with freshly caught fish, but try this recipe and snack on your own ceviche while you're tuning in to the rest of Shark Week!
