Ingredients

  • 1 lb. Baby potatoes (Yukon or red)
  • olive oil, for drizzling
  • Kosher salt and pepper
  • 1/2 cup sour cream
  • Juice of 1 lime
  • 2 Tbsp. Ranch seasoning

Directions

    1. Step 1Preheat oven to 400 degrees F. In a large saucepan, cover potatoes with two inches of water and boil until fork-tender, then drain and let cool.
    2. Step 2Once cool enough to handle, use a potato smasher to lightly smash potatoes, then transfer to a parchment-lined baking sheet and drizzle generously with olive oil and season with salt and pepper. Roast until crispy, about 20 minutes.
    3. Step 3Meanwhile, make the crema: In a small bowl, mix together sour cream, lime juice, and ranch seasoning. Serve with smashed potatoes.

How to Make the Cutest-Ever DIY Edible Place Cards

Have an early-morning birthday celebration with bagels or plain doughnuts instead of sugary cupcakes. Stack bagels atop a cake plate and place taper candles within each stack. Alternating pumpernickel and egg bagels or sesame and poppy can create colorful patterns. To ensure that the candles stay upright and don't lean on the bagels or doughnuts, drip some melted wax on the plate to use as an anchor. Festive ribbons add the final touch; just be sure to blow out the flames before they get too close!
