This time of year is not my favorite. It's cold, it's dark, and there aren't any holidays to look forward to. All I'm holding on to is the hope that summer is coming, and until then all I want to do is cozy up with creamy, carby comfort foods.
This might seem comforting, but eating healthy is actually a mood-booster, and these cilantro-lime salmon bowls will definitely make your stomach happy. They're jam packed with healthy stuff that will make you feel good, inside and out.
Let's start with the base: brown rice. High in vitamins, minerals, and fiber (hey, we all need it!) it's basically a super grain. We top our rice with Vitamin C rich bell peppers and everyone's favorite healthy fat: avocado! Last but not least, we've got salmon. Not only does it supply a healthy dose of protein, it's also packed with healthy fats and B12. Top the whole thing with our ridiculously good cilantro-lime dressing and you've got a easy dinner that will hold you 'til June. Hey, maybe February isn't so bad after all.
