Up until this week, I had never had buttered rum. The concept of drinking melted butter always sounded a little, well, gross to me. I'd heard of people putting it in their coffee, and a cocktail sounded even weirder. As I learned this week, I couldn't be more wrong.
This Butterbeer rum is part drink, part dessert. It's sweet, unctuous, and sooo comforting. It's so delicious there's a good chance you'll forget there's any alcohol in it.
The best part? You can just throw it all in your Crock-Pot and let it go. You don't even have to stir! Simply combine butter (yep, one whole stick) with brown sugar, butterscotch syrup, vanilla, cream soda, vanilla, and water. Set it on high and, essentially, forget it. The butter will melt, the sugar will dissolve, and the cinnamon will infuse. It's cray.
Right before serving, stir in your rum. The mixture will be hot enough to warm it up right away without burning off any alcohol. Serve it up with a huge dollop of whipped cream and some gold sanding sugar if you got it. I swear, it's pure magic.
