Everyone loves pizza, there's no denying it. Not everyone loves the carbs, though, so we've created numerous low carb crusts to satisfy your pizza craving sans gluten. I thought we'd done it all — from cauliflower, to broccoli, to ground chicken; I thought every low-carb rock had been turned. That's until I saw this pizza by blogger Closet Cooking and I knew I had found our newest low carb 'za.
It was genius, and yet, so painfully obvious. The solution was right in front of our eyes, atop every low carb pizza we'd made prior: cheese! Using a nonstick skillet, add a thick layer of cheese and top with pepperoni (or whatever else you want) and lid it. Cook over medium heat until all the cheese is melted and the edges start to get slightly golden. Remove your pan from heat and let your "pizza" cool for a couple of minutes. Slide it out of the pan (using an offset spatula if you need a little assistance) and garnish as desired. We liked dipping our crustless pizza in marinara, but ranch or hot sauce would also be killer.
So if your a pizza lover and a carb hater, add this to your canon. It's about as close to the real thing as we've gotten!
