It's a new year! Whether you believe in resolutions or not, there's a good chance you're trying to take it easy on heavy foods. The holiday season sometimes feels more like an eating and drinking marathon than it does, well, anything else. We've had our fun but we're ready to lower our cookie intake.
This cauliflower flatbread is a perfect way to ease yourself into healthy eating. It's got plenty of veggies but also cheese and bacon because we're so not prepared to jump straight into that healthy diet. It's super easy to make, and it's great hearty snack.
To start, grate or process your cauliflower until fine. Using a cheesecloth or kitchen towel, ring as much moisture out of the cauliflower as you can. No one wants a soggy flatbread! Next comes eggs, cheese, and holiest of spice mixes: Ranch seasoning. Form into a crust, bake until golden, and top with more cheese and bacon. Bake again until melty and drizzle with Ranch dressing (or serve it on the side). Now that's "healthy" food we can get behind!
