Baking bread can sound intimidating. You've got to worry about killing yeast, kneading, or, heaven forbid — over-proofing your dough. It's enough to make a person steer clear of all things carb-y in the name of easier recipes. This dish comes with none of those challenges though, so you have no excuse not to have some warm, homemade bread on your table tonight.
This is no ordinary bread. This one is laced with cream cheese, cheddar, jalapeños and BACON. It's a beer bread — AKA a quick bread — and it lives up to its name. Start by making your dough: just flour, sugar, salt, baking powder, some spices, and a healthy glug of beer. I chose Lagunitas IPA as it's one of my favorites, but feel free to mix it up. Keep in mind that if you choose a darker beer like Guinness, the bread will be darker too.
The second step is the really important one. Mix your cream cheese with jalapeños, bacon, and cheddar, then fold that magical paste into your bread dough. Vegetarian? Skip the bacon. Scared of spice? Cut down the jalapeños or take them out altogether. This is your beer bread after all! Just please, don't skip the beer.
